Quadra Island Shrimp and Rice Salad

1 pound  hand or machine peeled – cooked BC WILD SHRIMP
3 cups of cooked Rice- any kind (left overs are fine)
2 cups of Tomatoes- chopped or diced
¼-1/2 cups of Red Onion- finely chopped
¼ cup chopped Parsley
1 teaspoon Basil
1/3 cup Olive Oil
1/3 cup Red Wine Vinegar
Salt and Pepper to taste

  1. Mix rice, tomatoes, onion, salt, pepper together
  2. Add shrimp meat
  3. Add remainder of ingredients and mix.

Top with your favorite dressing or east as is. Easy and quick to make.
