Sydney (BC) Sidestripe on the Barbi

1- ½ pound raw sidestripe un-peeled BC WILD SHRIMP
1-2 minced garlic clove,
1 Tablespoon fresh parsley finely chopped
1 dash of Paprika
few tablespoons of your favorite white wine
½ butter melted
¼ cup Olive oil
3-4 Garlic cloves minced or crushed
1 Tablespoon green onion, or shallots minced
¼ cup fresh herbs (cilantro, thyme, parsley) minced
¼ cup of melted butter
Fresh Spinach leaves
Lemon Slices

  1. Make marinade by combining garlic, herbs, olive oil, onion, in melted butter.
  2. Mix in shrimp and marinade in the fridge for 5 hours or at room temperature for 1 hours.
  3. Put shrimp on skewer or cook on a vegetable stir fry pan.
  4. Cook only 2 minutes per side until flesh is white with pink highlights
  5. Place spinach leaves on plate with lemon wedges- Put skewers on spinach leaves.
